Tomato Basil Soup

*Approximately 10 over ripened tomatoes. Type of tomato will determine the flavor of your soup.

*1 large sweet onion

*bunch of basil. (select the basil of your choice, purple basil will result in a slightly peppery soup)

*three cloves of fresh garlic

*salt and pepper to taste


Preheat oven to 380. Cut tomatoes and place on a cookie sheet. Heat tomatoes until they are slightly caramelized,

Slice onions and add to cookie sheet with tomatoes ..bake until onion and tomatoes are both fully caramelized. Mince garlic and toast for a few minutes on top to the tomatoes and onions.

Blend all content along with basil until smooth.

I substitute the milk with low fat coconut milk and I always use vegetable broth.

Quinoa is a gluten free seed packed with protein. It is considered a whole grain food. It is also high in fiber, calcium, magnesium, iron, B vitamins, potassium, vitamin E, phosphorus, 9 essential amino acids and various beneficial antioxidants.

*rolled aots

*milk (oat, almond, soy, coconut)

*1 egg

*1tbsp baking powder

Blend everything together. The amount of rolled oats and milk blended depends on how thick you prefer your batter. I like to add frozen bananas to my batter.

Lastly, this is one of my favorite simply recipes. This video demonstrates several different ways to make this dish with chicken, beef etc. For vegetarians or those moving toward a more plant based lifestyle simply omit the meat and add your favorite plant based chicken strips.
