
Lentils are very versatile, inexpensive and are a good source of healthy carbohydrates and protein. They come in different sizes and types. The varieties include red, orange, brown, yellow and black lentils
Smokey Lentil Soup
1 Tbl Liquid aminos
1 large leek sliced
1 large carrot minced
1 cup washed lentils
2 Tofu browsers or pup’s chopped
32 oz can tomatoes cut
1 tbl cumin seeds, crushed or powder
3 sprigs fresh basil tops
1/2 tsp
Directions
* Saute the liquid aminos with the leek, carrot, and garlic in a pot-----add the browners and lentils, then stir for a few minutes.
*Add 1 can of peeled stewed tomatoes and their juice. Cover the vegetables with filtered water and bring to a boil, then add the spices.
*Simmer for 2 hour or turn the heat off and keep it covered all day. Reheat before serving.
Lentil Rice Potage
1/4 cups Browns lentil, rinsed
1/4 cup Small red lentils, rinsed
1/4 cup Basamti Rice
1/4 cup Diced celery
5 garlic cloves, minced
3 cups Shredded greens of your choice----kale, chard endive
1 onion, peeled and chopped
1 tbl onion powder
3 tbl Tamari
1/2 tbl each Coriander and cumin powder
1 tbl Italian herb blend
1 tsp Crushed red peppers, diced
Directions
*Put the lentils and grains into a large soup pot filled with boiling filtered water, then add diced celery and garlic.
*Cook for 15-20 minutes, covered, on low heat
*Add the greens and all of the remaining ingredients, simmer on low heat for 1 hour.
