When you need a little energy boost, these nutty bits will give you new life. Chia and flax seeds are rich in antioxidants, fiber and are also a source of protein.
1 1/4 c. old fashioned oats 1/2 c. unsweetened shredded coconut (optional) 1/4 c. mini dark chocolate chips and/or
1/3 c. honey (less to avoid over-sweetening) 2 tbsp. chia seeds 2 tbsp. flax seeds 1/2 tsp. ground cinnamon 1/4 tsp. kosher salt 3/4 c. natural peanut butter (no sugar)
1/2 tsp. pure vanilla extract 2 tbsp. milk (almond, rice, oat or coconut)
Vanilla protein powder (optional)
1. Line a large baking sheet with parchment paper. 2. In a large bowl, stir oats, chocolate chips, coconut, chia, flax, cinnamon, (optional protein powder) and salt
until combined. 3. Stir in peanut butter, honey, and vanilla. Mixture should be slightly crumbly.
4. If it’s too dry, gradually stir in milk. 5. Roll mixture into balls then place on prepared baking sheet. 6. Refrigerate until chilled, about 30 minutes.
